Well it’s finally here…the end of my 2nd annual National Cookie Week. It’s been a great week of making #CookieWeek trend on the twitter, baking a cookie a day, visiting all my fabulous participating bakery friends and seeing what they came up with…OH No! What am I to do? Hit the gym is what. BUT!! we still have today and one more cookie from your truly! I won’t keep you waiting for the recipe as I am sure there is a lot of Sunday mimosa to be had!

So without further adieu I give you Lady Nana Choconuts! (aka Banana Choco Peanut Butter cookies)

Her Needs…

1 stick of butter softened
1/2 cup sugar
1 egg
2 tsp vanilla
2 bananas mashed
1/2 cup Peanut Butter & Co. Dark Chocolate Peanut butter
2.5 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup dark chocolate chips.
1/2 cup chopped walnuts

Preheat oven to 325°

1. In the bowl of a mixer cream butter and sugars till smooth. (You should know me by now and I don’t have a kitchen aid so I use a fork..works just as good but is a little more time consuming!)

2. Add egg and vanilla and beat.

3. Fold in mashed banana and peanut butter till combined.

4. In a separate bowl combine flour, baking powder, baking soda and salt. Whisk to combine.

5. Add dry ingredients to batter in sections till incorporated, then add the walnuts and chips.

6. Spoon tablespoonfuls onto a baking sheet and bake for 8 to 10 minutes or till bottoms start to slightly brown.

These cookies come out doughy and very banana bread like. They will become very fragrant when they are done which is another way to tell they are finished.

Take them out of the oven, let them cool and Carmen Miranda do a dance cause you are finished!

I also have to take a moment and thank a few people. First off Keith Oberlin for hanging with me for hours and taking fabulous food photos!

Gerard Conte is an amazing illustrator who for the second year has done my bidding and created NCW images that I love and astound me!

To my dearest friends (especially M. Bragg) who are my taste testers, my assistants, my support system and care takers whom this week wouldn’t be possible without.

Lastly to all the participating bakeries. Amy’s Bread, Angel Food Bakery, Baked NYC, Billy’s Bakery, Butterfly Bakeshop, Eleni’s, Hey, Cookie!, Magnolia Manor Sweets, Make My Cake,  Michael Allen Desserts, Milk and Cookies, One Girl Cookies and Protein Bakery. You all made this week very special and tons of fun! I couldn’t have done it with out you either and I can’t wait to see what next year holds! Please support them!

Here’s to hitting the gym and beach bodies!

Deliciously Living,

Michael Muñoz
