Happy Friday of National Cookie Week y’all!! So it wouldn’t be cookie week if we didn’t have a recipe from fabulous LA food blogger Anita Lau, aka The Mad Hungry Woman. Anita and I have formed what has become a beautiful relationship across the states and via email but unfortunately her schedule keeps her so busy that she has no time to bake for cookie week. So, I do it for her.

I have an inkling that Anita loves her a not too sweet oaty dessert just because this is our second oat child of a cookie and to be honest this cookie is quite delicioso. This time around it’s a healthy option as far as cookies go and so without further adieu I give you…

Ms. Anita Diet Cookie! aka Healthy Oatmeal Cookies

Her Needs…

1 cup whole wheat flour
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp baking soda
1/2 tsp. salt
1/2 cup packed light brown sugar
1/4 cup unsweetened applesauce
2 egg whites
2 tablespoons butter
1-1/2 tsp. vanilla
1-1/3 cups uncooked old-fashioned or quick oats
1/4 cup cranberries
1/4 cup walnuts

Her Wants…

Preheat oven to 375°

1. Lightly spray cookie sheets with nonstick cooking spray.  Set aside.

2. Combine flour, cinnamon, baking powder, baking soda and salt in medium bowl; mix well.

3. Combine brown sugar, applesauce, egg whites, butter and vanilla in large bowl.  Mix until small crumbs form.  Add flour mixture; mix well.

4. Blend in oats, cranberries and walnuts.

(Don’t be mad but I may have split the dough in half and added half a cup of dark chocolate chips to one of those segments…everything is better with chocolate no?)4. Drop by rounded teaspoonfuls onto prepared cookie sheets, 2 inches apart.  Bake 8 to 12 minutes or until golden brown.

Cool on wire racks and Jack Lalanne take a breather!Have a great cookie weekend!
