We are in full swing of The Second Annual National Cookie Week and boy does it feel good! My sources tell me that Amy’s bread and Billy’s Bakery both sold out of their cookie of the day, tweets are coming in in droves and there even was a fabulous article written up about me and on of the participating bakeries!!! Inspired by last year’s Gayest Cookie in Town! we couldn’t be called The Kitchen Gaily if cookie week didn’t have a fabulously gay cookie! This cookie was inspired by Tiffany’s jewels and stained glass. So delicate, so beautiful and simple!
So without further adieu I give you
1 Cup of Butter (2 sticks), softened
1/2 Cup sugar
3/4 Cup Confectioners Sugar
2 Egg Yolks
1 tsp Vanilla
Zest of 1 Orange (about a heaping TBS)
2 1/4 Cups Flour
1/2 tsp baking powder
1/2 tsp salt
Rainbow Colored Sugar (you can find this at any baking supply)
preheat oven to 350°
1. In the bowl of an electric mixer (we all know…I don’t have one…If you are like me, use a fork if need be) beat 2 sticks butter, 1/2 cup granulated sugar and 3/4 cup confectioners’ sugar until fluffy.
